Camperdown Community House ‘Chop and Chat’ session instructor, Lynette Gleeson, gives hints and tips for creating quick, easy and healthy meals on a budget the whole family will enjoy.
Follow her step-by-step guide on how to make two meals from one – mouthwatering meatballs with rice and club burgers – all for just $2.35 a serve.

Quick Meatballs with Rice ($2.25 per serve)
Hamburgers with Sweet Potato Chips ($2.35 per serve)
- Tray of 10 hamburgers -- $9.00 at Woolworths
- 1 onion
- Small sweet potato
- Head of broccoli
- 880 gm tin of diced Italian tomatoes
- Small bag of long grain rice
- 5 flat mushrooms or burger buns
- Small amount of flour
- For the hamburger patties cut and roll into the size meatballs you like
- Add to the pan that has a small amount of oil
- Add cubed sweet potato then onion, cook until softened and the meatballs have browned.
- Add tin tomatoes, heat through
- Add broccoli or green veg of choice and place a lid on pan and simmer approx 10 minutes
- Serve with rice or pasta
- Flatten out to help cooking quickly
- Chop up sweet potato into chips and add to a small amount of oil and cook on medium heat
- Cut flat mushrooms or hamburger rolls in half and either pan fry or grill
- Once cooked assemble with lettuce and tomato with chips on the side.
